Inspired from the first governor of Independent Greece Ioannis Kapodistrias, Dafnis Family taming the aged olive variety of lianolia and with innovation methods produce the governor olive oil
Introducing The Governor: A Legacy of Excellence
The Dafnis family has rekindled the art of olive oil production on the enchanting island of Corfu. For three generations, our family’s cherished olive grove has graced the landscape of Agios Mathaios, nurturing the venerable Lianolia olive tree variety. Our unwavering commitment to crafting an exceptional, award-winning olive oil has propelled The Governor to global acclaim, solidifying its stature as one of the world’s foremost premium olive oil brands.
Inspired by the trailblazing spirit of Ioannis Kapodistrias, the inaugural governor of Independent Greece, the Dafnis Family has embarked on a journey of revitalizing the Lianolia variety. Through innovative techniques and unwavering dedication, we meticulously bring forth The Governor olive oil—a tribute marked by both honor and responsibility.
Olive Fabrica stands as a producer of distinction, meticulously orchestrating the entire olive oil production process. From tending to 7,000 carefully nurtured olive trees to the harvest, processing, and bottling in our ISO 22000:2005 HACCP-certified olive press, the result is a harmonious blend of stability and uncompromising quality. This holistic approach not only preserves the storied excellence of our heritage but also nurtures the potential for ongoing growth.
At the heart of Olive Fabrica lies the fusion of tradition and cutting-edge innovation, underscored by rigorous scientific inquiry. A testament to the continuity of the Dafni family’s olive oil legacy, Olive Fabrica endeavors to redefine Greek olive oil on the global stage. Embracing conscious change, we undertook the task in 2011 to transcend the shadow of a negative tradition, transforming Corfu’s reputation from producing subpar olive oil to crafting something extraordinary.
Corfu, renowned for its 4.5 million olive trees and a unique perennial variety, was once synonymous with substandard olive oil. In 2011, we embarked on a quest to not merely standardize yet another olive oil, but to shatter decades-old negative preconceptions and forge an innovative path. We embraced the legacy of the lianolia of Corfu—an ancient variety, little known to the world—and embarked on an odyssey to create an exceptional extra virgin olive oil, replete with a distinct identity.
